BUBUR PEDAS
Bubur Pedas is a traditional dish from West Kalimantan, particularly popular among the Malay community. Despite its name, which translates to "spicy porridge," the dish isn't necessarily spicy but is rich in a blend of flavorful spices.
This dish is made from rice flour cooked into a porridge consistency, mixed with a variety of vegetables such as fern leaves, water spinach, and turmeric leaves, and seasoned with spices like lemongrass, galangal, and bay leaves. It's often topped with side ingredients like fried anchovies, peanuts, or bean sprouts to enhance its taste.
Bubur Pedas is typically served during traditional ceremonies or special occasions, such as in Ramadan, and symbolizes togetherness and communal harmony. The dish is not only delicious but also nutritious due to its high fiber and nutrient content.
